Here’s a brief introduction:
• Vacuum
Packing materials with different oxygen permeability affect meat’s weight loss, microbial growth, pH value, volatile base nitrogen (TVB-N value), metmyoglobin percentage (metMb%), fat oxidation value (TBARS value), and texture of fresh frozen meat. Experimental results show that vacuum packaging can effectively control the growth of microorganisms and extend the shelf life by 8-10 days.
• Modified atmosphere packaging(MAP)
Modified atmosphere packaging can significantly extend the shelf life of meat. The higher the oxygen content, the brighter the meat appears. However, high oxygen content will lead to the rapid reproduction of aerobic microorganisms, resulting in a decline in the quality of fresh frozen meat and shortening the shelf life.Therefore, the mixed gas appropriately formulated in different proportions can obtain the best preservation effect, and extend the shelf life of fresh frozen meat that has been matured for 8 days under low-temperature conditions before undergoing modified atmosphere packaging by 12 days.
